Gastronomic Parisian Delight in Dallas
The most decadent and delightful dinner experience. From the warm greeting at the door by Charlie to the final dessert course everything was 5 stars. Our party of 3 delighted in the 12 course dinner with the wine pairings. Each bite was better than the last and the wines enhanced the flavor of the beautiful foods. The cozy candlelit ambiance lent itself to stimulating conversations while waiting for the next course. This gastronomic experience definitely exceeded expectations. Lucky to have Parisian fine dining right here in Dallas. Can’t wait to celebrate dinner again at Carte Blanche.

Wow, hands down best restaurant in texas . Caveat, I’ve been to at least 20 of the worlds best 50. And with their use of wild game animal and seafood, one of the best in the US. Came down from Seattle to visit family and they took us here and I was amazed how this gem exist in Dallas. Plating was beautiful but not over done, variety of ingredients across a 12 course , service right on par with any US Michelin 3 star . And a rare option, a tea pairing amount great wines

To honor the birth of my mother this year I had the good fortune to secure us a reservation at Carte Blanc for dinner. We adore the scrumptious and perfectly flaky pasties when we’re early enough to snag them on weekend mornings, but this was the first opportunity we’d had to get a dinner reservation. Since we were celebrating, we opted for the 12 courses in lieu of the 6 course menu. Our meal was a beautifully composed sensory journey that began with dishes plated impeccably and flavors that sang on the palate. While the reserve wine pairing tempted my sommelier sensibility, we elected to do the classic wine pairing. Given the skill and detail required to appropriately prepare such delicacies as the foie gras mousse, smoked antelope or scallops seared to buttery perfection it’s certainly a splurge and I was curious to see how well the classic pairing choices would stand up. Thankfully there wasn’t a single miss in the entire line-up, the wines each walked the delicate balance with every course- highlighting certain elements of the dishes but never overtaking the uniquely curated flavors. A few highlights from our dinner- Celeriac Tartlet- pistachio, pecorino & herb amuse bouche paired with Paul Bara Brut Reserve Foie Gras Mousse- pepper jam, roasted persimmon, gingerbread snap & cultured butter croissant (swoon) with 2020 Oremusl Late Harvest Tokaji Dry Aged Venison Loin- butternut squash puree, spiced quince, smoked antelope rib, antelope kielbasa, bordelaise sauce paired with 2019 Frias Cab, Napa Valley We will be back.

Great Michelin star quality service, food, and creativity. Our family enjoyed the 5 course tasting and the few extra surprises. All courses had a little uniqueness to them with local ingredients. The service was really top notch and they were very good with the kids (who also enjoyed the food and desserts!). Wine list was also very good and reasonably priced for this type of restaurant. Congratulations for making La Liste top 1000 restaurants in the world. We will be back.

Walking into Carte Blanche, the high-concept Dallas restaurant, feels like stepping into a sophisticated symphony of flavors where every note seems perfectly in tune. It's an embrace of Texan spirit that's as surprising as it is delightful. Eschewing the typical Texan predilection for beef, Carte Blanche charts a daring course. Here, wild game from the heart of Texas takes center stage in a menu that aims to showcase the native bounty with a fine dining twist. The Antelope, served two ways, is a revelation. One way pays homage to the traditional steak, showcasing the unique flavors of the meat, while the other is transformed into a horseradish croquette—a playful, flavor-packed dish that marries the rich gaminess of the antelope with a welcome kick of horseradish. It's adventurous and comforting in the same bite, a tightrope act that Carte Blanche seems to walk effortlessly. The grilled tilefish, served with an artichoke barigoule and smoked trout roe, is an anthem to the Gulf Coast. The fish, expertly grilled, is tender and fresh, and the smoky pops of the roe bring a playful contrast. The barigoule, a classic Provençal preparation, offers a tangy foil to the dish's smoky, rich elements. The whole plate is balanced and nuanced, a dance of flavors that are distinctly Texan yet universal in appeal. Opting for the tea pairing, I was pleasantly surprised. Each tea was meticulously selected to complement the dishes, a thoughtful detour from the traditional wine pairing that proved to be a journey unto itself. It was a reaffirmation that great pairings can go beyond wine, and like the menu itself, showcased a desire to step beyond the expected. Carte Blanche, a Forbes 5-star establishment, lives up to its reputation with an impeccably trained staff. The service is graceful, well-timed, and attentive without being intrusive—a harmony of warmth and professionalism that adds to the overall experience. The restaurant's bold departure from the norm is admirable. Yet, it's not just about novelty. There's a deep respect for the ingredients and a clear understanding of their potential. It's an exploration of the wild Texas terrain, a narrative beautifully told through the lens of its unique cuisine. If Michelin ever made its way to Texas, Carte Blanche would certainly stand a chance for its 3-star rating. The establishment pushes boundaries while honoring its roots, crafting a culinary experience that is as deeply satisfying as it is inventive.

We dined here for a special wedding anniversary and had a fabulous time. The service, food, and wine was out of this world! This meal was on par with Michelin 3 star restaurants around the world. We can’t wait to return!

To suggest it is difficult opening a Tasting Menu Restaurant will not surprise anyone but doing so during a pandemic takes confidence possessed by few, and with this in mind it is hard to overstate exactly how important Dallas’ Carte Blanche is both locally and as relates to “Fine Dining” as a whole. Begun as a series of pop-up Dinners before debuting the brick-and-mortar space in June 2021, high ceilings and exposed beams reminiscent of the spaces in New England where Amy and Casey La Rue cooked prior to settling in the Lone Star State, it was 6:00pm that two diners were seated on the verge of a kitchen gleaming with steel and white. Already visited at Breakfast, Amy’s Pastries setting the bar high for Casey’s $175 12-course menu pre-purchased via Tock, it is with lights focused on custom-made tables that the Lower Greenville space becomes more intimate with service to match. Refined but far from stuffy, the sort of place where either jacket and tie or jeans with a sweater are equally acceptable, it was after selecting Beverages that dinner began promptly, Canapes touching each part of the palate followed by a proper Amuse of Tuna and Caviar that pairs well to Sparkling Wine or carbonated Silver Tip Tea. Indeed offering “Tea Pairings” with each course, a bargain for exclusive varieties that match courses equally well as a duo of Wine Pairings, those willing to pay an $85 supplement continue their experience by way of a whole ounce of Sturgeon Caviar atop gently heated Scallops swimming in Butter and Seaweed. Never meant to be taken lightly, seasonality the focus and many Ingredients locally sourced, chilled Sikkim proves a brilliant match to creamy Liver intended to be slathered on faultless Viennoiserie while bold Ethiopian Koserret stands up well to carefully Grilled Eel with crisp Skin painted in Lemongrass Gastrique. Moving next to Swordfish, firm flesh accompanied by acid, salt and earth, Taiwanese Oolong signals the arrival of Collard Greens and Grits served in rarefied air alongside Wild Boar Belly and Venison Sausage with smoldering wood beneath. Still stunned by the “Texas BBQ,” as Chef La Rue called it, winter at Carte Blanche continued by way of velvet Cheddar Fondue perfumed by Truffles before throttling back a bit, tangy Ice and Cucumbers carefully cleansing the palate in preparation for “Entrees” – with as s. “Everything is Bigger in Texas” indeed, half a Quail stuffed with Duck Sausage reminiscing of Casey’s time at Joel Robuchon in an appropriately rustic way, the night’s final savory eschews Wagyu in favor of locally-raised Elk served rare and lean with a slice of Foie and faultless Bordelaise. Skipping Carte Blanche’s Cheese Plate, a supplement in addition to portion-sizes that won’t leave anyone hungry, elegant Sake Sabayon atop housemade Sorbet offers easy transition to dueling Desserts, a quenelle of Carmelia Mousse nesting on thick Chocolate and delicate Ricotta Donuts each delicious to the final bite and complimented well by warm Chinese Tea infused with Litchi. Nothing short of a “destination” Restaurant, and the only one that also houses a world-class Bakery by day, Amy and Casey La Rue have created something opinionated, smart, precise and delicious at Carte Blanche – the sort of Restaurant whose success thus far speaks volumes about the passion of those involved and the sort of diners who travel for experiences like these.

Opened in June of 2021 by Amy and Casey La Rue Carte Blanche was never meant to be taken lightly, the Tasting Menu evenings and morning Viennoiseries telling a story of the husband-and-wife team who met in Phoenix before cooking in some of America’s best kitchens and finally settling in Dallas. Occupying a former Restaurant in Lower Greenville, its current layout divided left and right behind a big wooden door, 7:00am sees guests led left where Amy’s Pastries reside along a counter behind glass, some two-dozen daily choices ranging from beautifully laminated Danishes to tantalizing Doughnuts topped with shiny Glaze. Priced on par with other such concepts, plush leather chairs offering far more comfort than the usual café, it was with wide eyes that nine Pastries plus two Coffees were ordered, first bites of a Soft Pretzel offering good stretch and a bit of heat before attention turned to an Almond Croissant stuffed with housemade Paste that is only subtly sweet. Next enjoying a world-class Kouign Amann while an orchestral rendition of Macklemore’s “Thrift Shop” played, shattering layers and Sugar falling to the ground while the center was still wet with Butter, La Rue’s Bostock succeeds as a result of good Bread and over-ripe Bananas while her Cream Cheese Danish carefully balances weighty filling with delicate surroundings. Not afraid to dip into more “homestyle” selections, the day’s Carrot Cake Loaf moist beneath Pecan Streusel, one would be hard-pressed to name a better Chocolate Chip Cookie than Carte Blanche’s oversized version while both the Brioche Doughnuts and eggy Crullers are peerless – the later especially better than any previously tasted.

My husband and I had the 12 course wine paring menu. It was the most unique and delicious experience that we have had. The wine pairing was spot on. The entire staff were friendly, attentive and personable. It is fast becoming the best restaurant in Dallas for a very good reason. Can’t wait to go back!

My name is 2 letters shy of Michelin but if I were reviewing for them this new gem in Dallas dining would get 3 stars without a doubt! They have it figured out. Every course exceeded our expectations and delighted our taste buds. If you do not drink alcohol, they have a fabulous tea pairing you can do with your meal instead of wine. I sampled one of the cold teas (served in a wine glass) and it was deliciously different than any cold tea I have ever had. Our server (BJ) was the perfect combination of professional and friendly. Chef-owner Casey came to the table to chat. Already planning to return to this new favorite!
