Wonderful
Wonderful dinner.. the food is vert creative and delicious. The wine pairing compliments the meal The service fits a michelin star restaurant

Part of the 5 star boutique hotel although non residents are welcome. The dining room is very elegant and stylish- opulent minimalist ?! I know what I mean ! 2 amazing menus 11 and 17 courses- don't worry as the portions are not silly- one razor clam, one prawn. But this does give you a wonderful opportunity to try so many different dishes . Each dish is presented like a work of art. Looks fab and so many different flavours and textures. The smaller menu is available weekday lunchtimes only. You will need a menu to remember what you have eaten- well I struggle to remember 17 courses. Lovely ambience. Great staff- very talented in the kitchen. Front of house are very knowledgeable but not over bearing. Some amazing wines. A wonderful dining experience.

My husband and I had lunch last week at Cebo. From the beautiful reception into the lovely space and straight into the kitchen for a glass of cava and an appetizer to the excellent desserts, we were so impressed. The space is beautiful and the service exemplary. There are too many excellent courses to pick one but their world famous croquette was one of the best things that I have ever eaten. I have already recommended this spot to my friends who are traveling to Madrid soon. It is definitely worthy of 1 or 2 Michelin stars. WE WOULD LOVE TO RETURN

Booked a tasting menu dinner for my mom's birthday and although I had done my research, I did not expect it to reach such levels of perfection throghout. The carabinero (similar to shrimp) was one of the finest things I have ever tasted. Having been to several tasting menus in Europe and the Americas, I believe this should be recognized as one of the best, as not one of the dishes was below an 8.5/10 mark. Everything in every dish made sense and they were all beautifully served and outstanding in every way. The team bristles with enthusiasm and they seem to seamlessly float from one place to the other. We were made to feel comfortable right from the start until the end. I'd recommend you to book it at night and skip lunch or have it early, as you will leave more than full, especially if you take the pairing menu.

Truly sensational. Our foodie family planned to 9-day trip to Madrid anchored around several Michelin and top rated restaurants. Even though CEBO had lost its Michelin rating due to a change in chef, without a doubt that it's only a matter of time before the restaurant gets another one. The four of us unanimously picked CEBO as our favorite restaurant during our whole trip. Service was excellent and attentive without being overly intrusive. They were actually all very warm and professional. The sommelier recommended an excellent wine that was very reasonably priced even though I was prepared for pricier options. The table spacings were generous so there was a lot of privacy despite the place being full and relatively quiet. The star of the evening was of course the slew of dishes. Every plate was beautiful, creative and excellent. We were a little concerned initially that the meal may be a bit too rich overall as the first couple of dishes were slightly heavier (the croquette was quite buttery... but oh so good), but that was not the case and everything was so balanced and well prepared/presented. Importantly they were all very fresh. So many highlights in the course - tear peas, beef cut, eel, smoked tomato, etc. - that it's impossible to adequately describe and must be experienced in person. Well done and congratulations to chefs Javier Sanz and Juan Sahuquilllo! Truly special. One of our party called it CEBO the best meal he's had in his life, and the rest of us had to really think hard to come up with other places ourselves.

What a great dinner. Starting from the welcome all was excellent to meticulous detail. The presentation, in the multitude of different plates / crockery, was a work of art on its own. One leaves the restaurant floating with the feeling of a great eve out. Well done!

The food was very disappointing for a starred restaurant - several dishes,such as the hake and the turbot, were extremely bland and none had the “wow” factor one hopes for at supposedly innovative restaurants. The snacks with the aperitif were probably the best part of the meal. However what really spoiled the meal was the intrusive service. We were eating with friends whom we had not seen for years yet our conversation was constantly interrupted by the server who never ever waited for us to pause but insisted that we listen immediately to descriptions of every dish. What made this particularly grating was that the descriptions were mostly incomprehensible even to our spanish friends. Had the restaurant been busy one might have understood the server being pressured but it was half empty.
We had a much better tasting menu elsewhere the previous night.
Amazing place for dinner in Madrid
Amazing experience! Modern design, great and very dedicated service and a great menue. We enjoyed the large menue "Somos Cebo" with more than 15 courses at a price of 125€. This is absolutely worth the money. Don't worry: the courses are of small tapas size but nevertheless you feel already start feeling filled after course #6 or #7. Broad variety of tastes, raw materials and mouth feelings... ! definitely a recommendation!
The main problem with the large menue is that you have to come in as early as possible and you have to keep high speed in order to finish around midnight... a lower number of courses might be beneficial for an even more relaxing evening.
The "classic" recommendation of accompanying wines was a good and satisfying choice.
