I wish I remembered our server's name because they were the reason that I gave this DTF 4 stars. This server was amazing and kind and knowledgeable and patient and checked on us appropriately and had good recommendations. As I was visiting family in Long Beach, it was my first time to Din Tai Fung and I was unsure about some menu items. It's a very modern, chic restaurant and SO efficient. Keep in mind although great for some families, it's quite loud in there. Their paper menu system that you fill in yourself to order is very easy and simple to follow. The wait staff is quick and came to our table right away which I loved considering we had lots of time while we waited for our table to look at the menu and fill it out. I don't really eat red meat so there were a few items I couldn't eat even though I wanted to but what I was EXTREMELY excited to see was that they had CHICKEN XIAO LONG BAO. I haven't been able to eat XLB in like 8 years because traditionally it has pork. This almost made me scream, I was so happy. The XLB were very good too. Savory and soupy and hot and dipped in the sauce, so tasty. As for most of the other dishes... I just wasn't really impressed. Nothing was bad! I want to make sure that's clear. Everything tasted good but nothing was really as hype as I feel like everyone has made it out to be. Dim sum I expect to be so flavorful and deep with flavor and rich and satisfying and I felt like their americanized versions were just that: americanized. It satisfied what an American wants when they get dim sum. There was light garlic flavors, little to no ginger, it just wasn't as traditional dim sum as I thought it was going to be. But again, nothing was bad. Just keep in mind, its dim sum for an American and you won't be disappointed. The textures and variety are amazing and the service was great!
