It felt like being in Spain in the best way
From the prominence of the gin and tonic options on the menu to the deep roster of tapas choices, everything about EDO confirms a lineage to the dining scene of Spain. We had Pan con Tomate, Romano Green Beans and Pollo a la Plancha and the Spanish artisanal cheeses. The chef is a talent, and everyone there takes pride in their work. They should be proud, as they have a stake in an elite establishment.

My wife found EDO on a Top 38 Las Vegas restaurants website. It didn’t disappoint. AMBIANCE: Restaurant is off The Strip, but take a ride share as it’s all worth it. Restaurant is intimate with only 10 tables of varying size (2-6). And it was full around 8pm so making a reservation in advance like we did is probably a good idea as good news and restaurants travel fast. FOOD: Your taste buds and eyes are in for a treatment. We wanted to go for Chefs Tasting Menu but we had too big lunch, so a la carte for us. We had Peruvian Baby Scallops (fresh in the shell), Patatas Bravas (not the usual kind, it was deconstructed and folded like Mille Feuille and baked), striploin Carpaccio on a puri bread (heavenly so we had it twice), Artichokes and Blue Crap. Blue crab was served in a special way that I won’t tell here and ruin the surprise. I liked it, but it was a little too rich at the end of the meal. DRINKS: Try the gin cocktails. I had the infused Grey Whale. One of the best cocktails I have had and they make it on their little cocktail cart. Good wine selection. We had wine by the glass. SERVICE: Quick, professional and friendly. Observant if you wanted to ask questions.

Unbelievable. We were here two years ago and it was fantastic then. Just over the top. We had the tasting menu last night. It was plenty. Lots of creativity and great flavors. Very attentive service. Very small place and stuck in a strip mall. The entry looks beat but it hides an incredible experience. Can't recommend enough . Some of the best food we have ever had.

My wife and I ordered the 7 course tasting menu, with an upgrade for Wagu beef, which I highly recommend. It was easily the best meal I’ve ever had. Such interesting and amazing flavors and textures. The staff was so cool in explaining each course and making us feel comfortable in how to eat things we’d never seen before. $300 for two with tip, but worth every penny. This was an experience my wife and I will remember forever.

This little spot off the tourist path is a fabulous gem. We ordered several of each of the cold and hot appetizers and desserts. All were incredibly fresh and delicious. Wish we had done the tasting menu! Wine list paired well with the offerings and the service was quick and thorough and helpful.

This is an outstanding restaurant. Thank God it’s not on the strip. It would’ve been adulterated. If you’re in Vegas come here because it is probably the best food you will have. It’s like living in Barcelona. Kudos to the chef. Every dish was amazing!

Located in a vaguely sinister strip mall way off the strip with a non descript exterior, this is an outstanding restaurant. We started off with cocktails, the gin and tonics are an excellent house specialty, my party of 6 tried most of the variations. We preferred the tasting menu. They were able to accommodate a gluten free requirement for one person they allowed the dairy free to order off the normal menu. We opted for the scallop adder and highly recommended. Excellent wait staff, probably more romantic than business but it worked well for us. Probably half the price it would have been on The Strip

Food was average. Nothing stood out. The best thing was the potato. The Waldorf Astoria had the same potatoes for breakfast. Service was horrible. There was one server who was nice and explained things. The other three just put your food on the table, told what it was then left. One of them even took a drink, wiped his mouth and nose and continued service without washing his hands. Service was very rushed. I even has two dishes served at nearly the same time. If you a fast eater and like to be pushed out door, then this is the place for you.

I love a good tapas restaurant and this one did not disappoint! Try the Chef's Tasting menu for a sample of unbelievable tapas. From watermelon gazpacho to crab to halibut to lamb merguez every bite was an adventure!

There are meals, some good, some bad... and then there are - rarely - religious experiences. Foodies know what I mean: those precious restaurant experiences where the food is so good that you find yourself closing your eyes to block out every distraction so that you can devote your entire attention to the flavors in your mouth... and this is sometimes accompanied by you looking like an idiot because you’re moaning with the pleasure of it all. Eating at Edo was one of these blessed experiences, a truly memorable meal. We ordered the tasting menu, and each small course was exquisitely designed and presented: here were remarkable combinations of flavors in perfect balance, and some truly creative dishes. The staff recommended a Spanish white wine that paired beautifully with some of the courses. And the service was perfect too (partway through the waiter asked how we liked everything, and I joked that I was pretty sure that by this point my wife was ready to sleep with the chef). Edo is, incongruously, in a strip mall... but don’t be fooled. This is as good a restaurant as you’ll find anywhere.

What a Find! We were in Vegas for two nights and thought this place looked interesting. It is located off the strip in China Town. It literally is in a little strip mall. The minute we walked through the doors we were transported to another world! The service was fabulous. We chose the chef's tasting menu and each course was more delicious than the last! Their craft cocktails were unique and tasty as well. We started with a peruvian scallop that melted in our mouth and hit all the tastebuds! After the 30 day dry aged ny striploin was served we asked for a wine recommendation and the red pairing was superb. The Wagyu beef pastrami was out of this world too. The entire dining experiece was over the top. I recommend this place to any foodie that visits Las Vegas!

FIVE STARS: In a city where dining “critic” or “expert” gets liberally applied to folks who’ve never eaten in a Michelin 3* Restaurant or traveled overseas it is hard to take any claim of “best” serious. Every steakhouse has an “amazing” tartare. Every off-strip spot opened by a former strip Chef is “incredible.” Fact of the matter is that not one of them has the skill, daringness or unintentional excellence of EDO. This isn’t food for the #gram. It is not a redundant Caviar cart or GM willing to monkey dance for influencers. The bathroom is *awful* for selfies. This is just pure, heartfelt cuisine from a Chef who understands flavor. It is Las Vegas most exciting restaurant every day and probably the best most nights of the week for anyone who truly values great Food.

Don't let the strange strip mall it kinda looks like an alternative massage palour frontage put you off (even our Uber driver said "do you want me to wait" lol). Yet once inside it was a different world, intimate, chic and packed. The service here was impeccable in its attentiveness and the menu was a myriad of combinations to delight. Being Tapa's officianados we had high expectations, the Patatas Bravas was one twist we didn't expect (will say no more) and the plates were fresh, hot and tasty. This place is a hidden gem. Well worth an outing, if you can get pass the frontage!

Opened in 2018, with another project slated for 2022, Edo Gastro Tapas & Wine has quickly ascended to the ranks of Las Vegas’ top tier by looking backwards while at the same time pushing boundaries rarely approached by off-Strip dining.
Inspired by Catalonian traditions, Chef Oscar Amador Edo’s upbringing in Barcelona gifting him with a respect for diverse Ingredients and an ability to craft poignant bites that highlight rather than hide them, it was as a party of three that guests were accommodated near the front, GM Roberto Liendo charged with creating a Menu Degustacion including both regularly offered items and nightly inspirations.
An acronym for "Extra Day Off," though EDO itself is open from 5pm until 9pm daily, it was with most of the Restaurant’s other 32 seats full on Monday that things were underway quickly, vibrant Gazpacho preceding Mussels kissed by acid and Kushi Oysters beneath Oeufs Brouillés.
Weaving traditional to modern in a manner not dissimilar from Jose Andres or even the Adria brothers, imported Charcuterie atop Puffed Bread lingering long after a single bite thanks to an aerated Cheese center, Caprese Cups and Potato Salad Bites completed a course of “Canapes” alongside decadent Brioche with Suckling Pig, Lobster and Caviar.
Not about to skip “mille-feuille” Patatas Bravas, or EDO’s destination-worthy eighth-inch wide Bikini, Oscar’s Foie Gras Terrine leans to France by way of Beets and bitters while “Burnt Leek King Richard” elevates a humble ingredient with smoke and complex spices.
Seemingly stepping out of season with Peas, though Spain’s prized Guisante Lágrima are actually grown year-round at a steep price, precision again paid dividends in a gently perfumed bowl prior to Torrija de Pulpo that seems crazy one experiences crunchy Octopus atop custardy Bread with a linger of Fisherman’s Stew.
Next dressing Celery Root in emulsified Crab Butter with Truffles, a bit of Citrus tying it all together, chopped Steak rarely finds itself in such good company as it does at EDO, nor does Dover Sole that is properly cooked beneath Skin crisped separately alongside fried Caviar.
The year’s 6th meal at EDO, each seemingly better than the last, no bite proved more luxurious than Short Ribs Ravioli inspired by R&D for the team’s upcoming Anima at Gramercy, though slowly cooked Arroz a la Cazuela with marinated Duck Breast and an earthy mélange was not far off.
Ever inventive, but previously content with three Desserts offered since opening, another surprise arrived to finish in the form of tropical Fruit Carpaccio beneath Coconut Cream and the all-new “Broken Egg” Crema Catalana that puts an artistic spin Spanish Crème Brûlée.

What excellent food! Every taste on the tasting menu was better than the last one. Service is good, a different model but it works and the drinks are as good as the food.

Adventurous eating with al carte or fixed price menu. The whole party wasn't adventurous enough for the table menu, but we did find 8 dishes to share. Some were AMAZING. Like we'll never taste anything that good. Visually appealing, interesting compositions, creative food and drinks. NO WAITING AREA / BAR area! if you get there early get a seat at the bar in the same building.

When dinner for two suddenly turns into five including dietary restrictions, a pair of renowned physicians and two PhDs it can safely be said the night is going to be a little different than most. "I like Vitner Grill" said the man with more years a clinician than I've been out of diapers. "What about Jaleo?" said the out-of-town Pescetarian staying at Cosmo. It's rare that this writer is the least academically-accomplished person at a table, but I had to intervene.
But then came questions from Roberto and Chef Oscar. How do we impress someone who just dined at the Restaurant of the World's best Chef (per The Best Chef Awards 2021)? I suggested they do the same as they have five times prior - "cook whatever you like."
And they did. And it was outstanding regardless of experience. Harvard, Stanford or a Buckeye who has been to ten of Spain's Michelin 3* Restaurants.
Perspective is everything, and I'm blessed to see much of life from an advantaged position, but the times I get to open new (or old) eyes to someplace like EDO Gastro Tapas & Wine in my own town are extra special.
