This two Michelin star dining extravaganza is a master
This two Michelin star dining extravaganza is a master class in service. The atmosphere is also just lovely....formal but not stuffy, contemporary and classic at the same time. The 10 course menu is truly art on a plate. And for the most part, the execution was something to behold. We did one wine pairing between the two of us and the wine experience was just spectacular. Not a single complaint on the selections and we just adored our sommelier. There were a few misses in my opinion which I will detail below. But first, the highlights: 1. The canapรฉs served on a log centerpiece are delectable. Such an interesting presentation too. A great wow factor to start the meal. 2. The caviar course really worked. Beautifully plated and the textures were spot on. 3. The squash dumpling soup was also quite tasty and very pretty. 4. But oh that scallop... this was no ordinary scallop. The textures wowed and the flavors were balanced and interesting. 5. The carrot terrine garden plate was beautiful, but it lacked something.... Can't put my finger on it but it was not my fave. 6. Probably the single best course was the maitake mushroom-wow. 7. The king salmon was also pretty spectacular. I've never had this tiny piece of fish cooked with such deftness. Made me wonder how they achieve this delicate crispness with almost but not quite rare inside. Amazing. 8. The richest dish, and probably the one that has the most cache, was the most disappointing for me-the wagyu beef was too fatty (yeah I know it's supposed to be...but...) and the peanut accompaniment sort of puzzled me. 9. The eighth course is 1 of 3 desserts. While pretty on the plate, the rice pudding was chewy, not creamy, not particularly interesting and the four colored purรฉes, while bright and interesting, just couldn't salvage this dish for me. 10. The frozen tea sphere with raspberry and chocolate was by far the best sweet course. It's a wonderful creation and really wowed. 11. Sadly, the last course was an attempt at a plain fresh donut with three sauces. And while the presentation is so cool, the donut is heavy, chewy and not to my liking. Feels like this one needs some refinement. Overall, the experience was quite something. We were given a tour of the kitchen while they were in mid service so that was fun. They are really proud of their work here. The service is absolutely incredible. My napkin dropped on the floor and before I could pick it up they gave me a new one. They really know how to do service here. I am not sure Ever lived up to my expectations. It's not the very high price tag that bothers me, it just felt that for that price and Two Michelin stars, the dishes that missed should have been a bit better. But if you're in town and looking for the best service and theatre on a plate, give it a try. We enjoyed it a lot.

The food and service were both incredible and the atmosphere was romantic and quiet. The best service and food I've had the privilege of experiencing. The food really stood out specifically when compared to Alinea. Hard not to compare them. But the food at Ever is just better. It's not technique for the sake of being technique. Where a star is lost is that Ever is known for their superb, world class hospitality and they had a slight miss that made us feel very... weird? They asked if we'd like to book a time at After prior to our dinner for a few cocktails. We said of course! And they forgot to book it. So we got to After and they looked at us like we didn't belong. We weren't "on the list." They did everything they could to make it right, but was just a weird feeling to start the night with. Overall, I truly recommend Ever and highly doubt that you have a slight slip like we did. Everyone has a bad day sometimes and if Ever's bad day is just forgetting to book us cocktail time... that's a pretty low stakes bad day.

We had the most perfect experience at Ever, celebrating our 20th anniversary. We knew it was going to cost a lot, but it was cheaper than a destination vacation, so we were ok with that! We opted to include the wine pairings and are so glad we did! The wine was all fantastic and worked so well with the dishes. I know only a little about wine, but was able to understand the matches and why they worked. Every glass was heaven. The sommelier was so, so down to earth and knowledgeable. He answered all of our questions and was such a great conversationalist, telling us the story of each wine, where it come from and in many cases, the people he knows that make it. Everyone knew our name, why we were there and made sure to keep us as happy as we could ever be. We were lucky enough to get a tour of the kitchen and meet Chef Duffy. The easy going personalities and obvious obsessive commitment to perfection in service was the same in the front of the house as the back. The food was unlike anything I've ever imagined. So many amazing combinations and simple, mind-blowing ideas. We had to slow ourselves down and just sit and taste everything slowly and intentionally because I could have just inhaled it all. The service of course was ridiculously good. Went to the restroom and came back to a fresh napkin. Greeted by name by everyone we interacted with. Synchronized water filling! It was all fun and magical and memorable. We are hoping to save enough to make it our annual anniversary celebration! It's with every penny. You need to think of it as an experience, not a meal. If you go in there thinking you are going to get $1,000 worth of ingredients you are mistaken. Everything is the highest quality it can be, but it's the ambiance, art, service, wine and food that bring it together to create a very worth it experience.

I was excited to check this place out - a friend and I decided to check this place out when I was in town. Our menu for the evening included: +Mushroom - pineapple, soy, carrot top +Sea Grapes - hijiki, celery root, nasturtium +Asparagus - caper, cardamom, verbena +Cucumber - togarashi, sudachi, lemon balm +Carrot - finger lime, ginger, blue basil +King Trumpet - black olive, coffee, frisee +Fennel - black garlic, potato, endive +Cabbage - smoked coconut, hon shimeji, sorrel +Black Walnut - passion fruit, pineapple, citrus lace +Chocolate - kiwi, black tea, mint The presentation of the dishes were okay; we were disappointed, however, with the flavors, as we thought they just weren't there. Without a doubt, this is one of my favorite restaurants in the country. I keep waiting for Chef Duffy and Michael Muser to receive that third Michelin star. The food, the presentation, and the service are all off the charts incredible. A special shoutout to the sommeliers because one of the reasons this place is so special is because the wine pairings are also amazing. There is no point even referring to favorite dishes themselves because they change regularly and are all incredible. I come here once or twice a year when I pass through town and I have never been disappointed, EVER Thank you, Nick, Irving, Luke and Oscar! You and the rest of team will help Duffy and Muser with that third star.

Everything in this place from the ambiance to the food is outstanding. We had drinks at their bar next door after. Beautiful setting that actually serves small plates as well so if your wallet can't stretch to the restaurant next door, try the food at After. Tasty, and to the standard of Ever down to their French fries! We naturally had the tasting menu. This was our second time here and I was pleased to see that the plates were more varied than the last time we came. There was a good selection of seafood and meats. The wagyu was outstanding. Everything was beautifully plated and the wine pairings were thoughtfully curated and complimented the food. Wait staff are very attentive and the sommelier was knowledgeable and happy to explain his wine pairings. Ever is pricy but if you have a special occasion, it's worth every penny.

Although this was not my favorite meal of 2023 - I believe this was the best hospitality I experienced in 2023 and I will absolutely go back next time I am in Chicago. Logistics - Parking is pretty minimal and it's not the best part of town so I would encourage using a ride sharing app (Especially if you are doing the pairing). Attire - strong recommend going formal - slacks and button down minimum for gentlemen and a nice dress or pants equivalent for the ladies. Reservations - released two months in advance on the 1st Tuesday of each month. For example, April reservations will be released on the first Tuesday in February, etc. I opted to do the wine pairing with the tasting menu and the selections and the way they were presented were outstanding. I was a single diner since I was on a business trip and I did not feel uncomfortable in the slightest. The team was welcoming and engaged in conversation with me all night. The food courses were excellent, but the bread and butter pairing throughout were actually my favorite food aspect of the night. Make sure you stop by the restroom as well. The hospitality throughout really stole the show for me. I love and appreciate a kitchen tour. Ever was a kitchen tour and then I was able to watch and ask questions which was one of the highlights of the visit. My favorite part of the entire experience was the wine I was gifted when I left. I mentioned to the sommelier that the Sauvignon Blanc from the pairing was the best I have ever had, and when I left, they gave me a bag with a bottle to take home. Extremely thoughtful. My only regret was not having time to go to After, but I definitely will next time.

Bucket list ever watching For Grace at Seattle International Film Festival in 2015. Ever while not Grace doesn't disappoint and not having researched Ever, the food was a total surprise. Every dish is like a familiar comfort food elevated with more intense flavors and wonderful presentation. Service is impeccable and I got a behind the scenes kitchen tour at the end. Personally I think they deserve a 3rd Michelin star unless they aren't consistent.

This has been on my bucket list for several years, and New Year's Eve was the perfect special occasion to enjoy a 2 Michelin starred experience. The atmosphere was understated elegance, chic and comfortable without any needless distractions from the artfully prepared courses you're served. The staff was so choreographed, I thought I was watching a production of the Joffrey ballet. We were immediately greeted, served a choice of champagne or an espresso martini, and shown to our table. The 3 hour experience flew by as we enjoyed 12 courses with 3 bread and butter pairings and a full wine pairing. I especially loved that they served only 1 meat course (Wagu which was superb), with the other main courses being seafood. I also loved that they served 3 bread pairings with truffle butter to accompany each of the main courses. The wine pours could have been a tiny bit larger, and I was hoping to shake hands with Curtis Duffy, but I won't let that spoil a night to remember.

Regardless of the minor unprofessionalism we experience during our dinner, we still consider our dinner at @everrestaurant to be not bad, however, what happened after the dinner subverted my whole understanding of hospitality. WORST experience EVER @curtisduffy As a foodie I always take notes on the details of each dish I enjoyed. After my dinner at EVER I received their auto email asking for a rating, in which the also said "If you have any questions or comments, please feel free to email us" and that's exactly what I did.I sent email regarding some of the ingredients I missed during my dinner, using polite phrases, and not digging into their "secret recipes" ( I do this all the time at more than 100 fine dining places and never had I been treated like this before).Nicole Chavez, the office manager of @everrestaurant first accused me for being "inquisitivsaid will get back to me shortly.Obviously she was not taking this seriously and the so called "shortly" took longer than another two weeks. Then after two weeks I received again an email, saying that they have too many large groups thus has no time to respond to me, without apology yet with arrogance!To make it worse, starting from the THIRD WEEK, they never respond to my email. How arrogant and hostile.I tried to reach out to their director of hospitality @acordell11 but I guess she also want to stay out of this. Deeply disappointed! No chance worth the 20% service fee they mandatorily charged, and definitely not two Michelin standard! How would they ever expect diner to dine back after being treated like this!

First of all, let me begin this review by saying I had a wonderful time at Ever. For the past couple of years I have been traveling around the US dining at different Michelin starred restaurants and Ever was #8 in Chicago area and #40 in total. I must say Ever was the best one so far in Chicago area and easily top 5 among all in my humble opinion.I didn't go with the wine paring this time, instead I had the Bourbon based old fashion and it was delightful, not overly strong which allows you to taste different notes of the drink. Each course was beautiful designed and my top 3 courses are pictured below, caviar, scallop and pasta course. Usually at other places I had always found the foam to be a bit too citrusy, however at Ever, it was at the perfect citrus level which elevated the entire dish to another harmony level. We eat with our eyes first, the scallop course was love at first sight, of course it was also cooked to perfection as well. Lastly I would like to mention the pasta course, the creaminess of the mascarpone and earthiness of the chestnut complemented each other so elegantly. Truth to be told, I was getting bored of a lot of other place all have the same pasta dish; spaghetti with a creamy sauce and shaved truffle on top, therefore what a surprise Ever provided me.As always, the service was top notch from everyone. I haven't repeated any Michelin yet because there are so many, but I will return to Ever in the near future to try their other seasonal menus. 10/10 recommendation to everyone!!

If I had to leave a one-word review, that would be it. From the decor and staff to the food and wine pairings, EVER hit EVERy mark. We have been to Next (the opening Paris 1906 menu.) We have been to Alinea (February 2020.) We have been to Albert Adriร 's Bodega 1900 (when we couldn't get into his brother's El Bulli.) We have had tasting menus that aren't Michelin-starred. We have eaten in Paris, NYC, London, Shanghai, Amsterdam, L.A...... And while every experience listed above is one forever notched in my mind's memories, it is the evening we experienced at EVER that tops them all. There is something to be said about every morsel's molecule that Chef Duffy has crafted for your tongue. There is something to be said about the white ash slats of wood and textured walls that balance out the gorgeously moody atmosphere. There is something to be said about the sommeliers' precise picks and pairings. There is something to be said about every aspect - the bathrooms and readings, the music spilling out of the (hidden) speakers, the perfect table spacing. But at it's core, at the very thud of this establishment's heart, the most to be said is about the staff. The people. For without the people - the woman who greets you by name at the door and escorts you to your specific spot, the head server's smile, welcoming and warmth, the sommelier's explanations of how the wine will play with the dish, the servers who bring and take away dishes with effortless grace - there would be no EVER. To play on words, and a cheeky young person's game, never have I ever experienced anything like EVER. It is unpretentious. It is delicious. It is fun. It is everything you'd ever want when making plans for an event (fair to call it that) of this caliber. And it is, by far, the best meal and evening I have ever had the privilege of experiencing. I don't want to go into the meal's details or the exquisite wine pairings. That's for you to discover on your own. But I do want to say thank you to every person at EVER who made our night one for the books. And I especially want to thank the staff for two surprises that left us in utter disbelief - your graciousness and gifts will not be forgotten. There are restaurants with three Michelin stars (and I highly believe EVER deserves that third,) and there are restaurants with no Michelin stars that still manage to blow your mind. And then there's EVER; a place that ticks all the boxes - even boxes that don't exist. Thank you, again, EVER.

Chef Curtis Duffy's EVER is a MUST if you're in Chicago--add it to your bucket list right now! It's is a full sensory experience from the moment you step inside: the interior is breathtaking, every dish is perfectly coursed out and crafted to engage and entice all of your senses, and the service was impeccable. Favorite was the frozen hamachi ribbon that melts in your mouth! Chef Duffy is brilliant and I am obsessed. Definitely one of my top dining experiences EVER!

The service is impeccable, the food is whimsical, innovative, and delicious, and the restaurant is just fucking cool. The restaurant reminds me of Kimye's house (I mean that in a good way). I knew from the second they poured our table's water in unison that this was next level. This team and the experience that they provide is fantastic, and I cannot recommend Ever enough.

Best dinner in Chicago hands down! I dined here in September and I cannot wait to come eat here again. Every dish was a masterpiece and tasted out of this world. This was one of the best dining experiences that I've had yet, I truly cannot recommend this restaurant enough. The service was impeccable as well. I can't wait for EVER to get it's third Michelin star!

This review for Ever is going to be a little different than those I usually write. I feel like I'm not a competent enough food critic to say anything more than everything my husband and I had on our menu was TO DIE FOR. There wasn't a single dish we disliked. Everything was utter perfection. But that's to be expected given the two Michelin stars and price point of Ever. What I really want to highlight here is the experience. The tables were so far apart, it felt like it was just you and your party. The chairs were placed together, not across the table from one another, so you could easily converse at a volume fitting the calm and quiet atmosphere. The seat placement also allowed for the serving staff to present the dishes with ease - it was almost like a stage for the food! It made the whole experience feel intimate without feeling stuffy. We were there for almost 3 hours enjoying our experience and never felt rushed by the service. They were there to go at our pace, and we were so grateful for that. We were thoroughly able to enjoy each dish and glass of wine at our own pace. The staff generally were also just so friendly and more than happy to answer any questions we had about the food or wine.In sum, of course the food was absolute perfection, but it was the service and overall experience that will keep Ever in my mind for any extra special occasion where I want to be pampered with food and wine. Thank you to everyone there for giving my husband and I a first dinner as newlyweds that we'll never forget :)

The most memorable things to me about Ever were creative combination of flavors, and extremely fine aesthetic presentation. Grapes with chocolate mousse cake, ginger lace cookie with grapefruit, frozen hamachi with basil seeds, figure lime. Some good flavors are not traditional and I believe that's what the creative philosophy Ever is delivering. like the frozen hamachi course, gives you different flavors and texture when it's just served and after melting in the mouth. From all the details from the beginning to the end the meal, I could tell the owner and Chefs have put all of their hearts in this restaurant, and make us feel very special throughout the whole meal. Also a small detail, my husband stood up to rest room the same second our server was bringing the next dish. They immediately turned back to the kitchen while saw my husband left the table because they didn't want my husband miss the first seeing of the next course.

So far the best dining tasting experience we've had here. The experience was better than others including Next and Oriole. Very well timed service, personable, and did a good job anticipating our needs. Interior design, lighting, and attention to details added to our experience (including the bathroom). Of course the food and wine pairings were excellent. Usually in a tasting, there's one or two we don't care for- but here all were excellent. We have realized after a few tasting experiences that it's the service that truly sets the meal apart and Ever was notable in this regard. Not sure how it could be better.

My brother and I took my mom as a Mother's Day gift. The service was impeccable. We were the lucky table chosen to sit in the private dinning room. Just a little extra special and has a peek into the kitchen. The food was unreal. Flavors and combinations that we have not had before. Favorites were the rabbit dish, truffle risotto, and of course the pea dish. Sweet peas in a dessert course!! The fun of a tasting menu is that you don't know what is coming next!!

300$ a meal and they pay their cooks minimum wage and brag they can make up for it with overtime. Nothing like working 80 hours a week! Get with the times Duffy and start giving the people that make you, a livable wage.
