Our best meal in the Loire Valley
We spent five days in the Loire Valley in late August and early September. During that time, we ate at five fine dining restaurants, including one where the chef has two Michelin Stars. All were good to great, but the best meal we had was at Auberge de la Caillere. It's inconceivable to us that the chef at this restaurant doesn't have at least one Michelin Star. My wife and I were seated promptly (we had made a reservation, and are glad we did) and ordered two different cocktails: a La Calliere, with Chambord, mandarin cream, and Cremant de Loire sparkling wine; and a LeLoire Berries, with Cointreau, framboise cream, strawberry and cranberry juices, and Angostura Bitters. We preferred the La Caillere. To go with our meal, we had a lovely bottle of Cheverny, a 2020 Gravottes. We each had the duck foie gras with white Penja pepper, rhubarb hibiscus, gingerbread, sweet spice reduction to open. Our entree was also the same - French peach fish (never mind the translation, it was delicious and perfectly prepared), with coconut from Paimpol, zucchini on the side, bouchot mussels, lemon cream, and coconut galanga boullion. For dessert, I had Cremeux Valrhona Grand Cru with a crispy gavotte and chocolate ice cream. My wife had an apricot "pocket" with cardamom, pistachio de Bronte cream, apricot gel, and apricot sorbet. Every item of the meal, plus all the extra chef treats, was superb. Between the multiple amuse bouche, one of them almost a second dessert, and the fabulously prepared food and superb wine, this was one of our best meals ever. The restaurant is run by a husband and wife team - he's the chef and she runs the restaurant. The service was impeccable, and the sommelier gave us a great recommendation to go with our meals. If you find yourself in the central/eastern part of the Loire Valley, I cannot recommend the Auberge de la Caillere highly enough. That it doesn't yet have a Michelin star is a culinary injustice.
