Nice hospitality from entrance to our table. Decor is modern with pop figures on the wall, which isn't my style but whatever. Their menu they have 2, actually. A regular cheap and a chefs that's almost double the price. Some menu items overlap while chefs menu has greater hits. Both come in 5 or 6 courses and with wine pairing. I tried the chefs menu with wine pairing. Nice surprise that they bring out a couple of appetizers before the menu starts. They were all delicious. Meal as expected was very tasty, and the wine pairings were great although heavier on white wines. Also, the truffle old fashion on the cocktail menu is very tasty and unique.

Excellent food and service! The wait staff were all very friendly and welcoming and not pretentious and made it very approachable for people that are not used to fine dining. The food was excellent- some were more my style than others but they all tasted great and the presentation was amazing. We had the six course dinner. If you have the time and can afford it I would highly recommend.
Best Dinner of our Life!
This place was beyond words! The service was impeccable! It seems post pandemic service has really gone down so this was a breath of fresh air to have this level of service! The whole staff was very attentive but Catarina & Ronald really made our visit special. We did the 7 course pairing with wine. One really cool thing they did was make it a blind pairing so you could really appreciate all the flavors and thoughts that went into the whole experience. Very romantic setting, beautiful decor and wonderful food! We live in the USA but have already made plans to come back!

As Americans not knowing where to eat In Amsterdam last minute this was a gem. Food was beautiful and delicious. We were even trying to rank this with some other Michelin multi star places. Definitely hits above a 1 star!
An award-winning dinner
Like a competitive dance, this restaurant led, kept up and finished with every. Our group of four enjoyed the Chef's Selections with a wine pairing. At 300+ pp this was worth the expense and impressed at every pour, presentation, and course. Welcoming staff came and went in an interchangeable manner, each presenting details on dishes, flavors and wines. Every need was anticipated, from readers for the faint of sight to alternative wines for those who questioned a pairing .. no service was spared and guests were treated to a memorable evening. The staff was as great as the food and left us wanted ovation!
Wonderful
We had the taster menu with wine flight and both were interesting and amazing in equal measure. My wife does not eat meat, but does eat fish and the variant’s made to the menu were delightful. The ambience was cool and sophisticated, just what you want for a special anniversary. Every detail is well designed from the plates, the wine glasses, the cutlery, further lifting the experience. These places only work if the staff are special. The right level of interaction, knowledgeable about the food and wine they are serving and the staff here have it in spades. They were truly wonderful. A special thank you to Catarina, who besides explaining the wine also, being Portuguese, gave us a list of restaurants to visit on our upcoming holiday to Portugal. We flew to Amsterdam to try this restaurant and it was time and money well spent
Perfection From Start to Finish
We were warmly greeted downstairs in the hotel and escorted to our lovely table for six. A parade of imaginative, delicious, beautiful dishes followed. Truly exceptional food and service and marvelous guidance by the sommelier. One of the finest dining experiences we have ever had. Our table was very much impressed with everything. Hopefully, a second star will be awarded soon.
Wonderful breakfast
I spent 2 nights in the hotel and both mornings had breakfast in the restaurant. The food is wonderful and they do their best to accommodate anything you might want. The staff is very attentive.
Underwhelmed.
Was not a fan of most of the dishes. While there were a lot of servers present, seemed unorganized and not consistent. I have never been to a restaurant of this caliber that left a dish on table while one member of the two person party was not present. We were never offered another drink when taking empty glasses. Seemed to be ignored when we were not interested in wine. Disappointing meal for the price.
Should be #1 in Amsterdam
I find it hard to imagine that an individual rated this restaurant as average, let alone very good! Not sure where you have been dining, perhaps you are from a competing fine dining restaurant! Bougainville is simply exceptional in the world of Michelin accredited restaurants. Two of us were there for a five hour dining experience, never rushed, attended to by many staff members unobtrusively at all times. I recommend the chef's selection and pair it with the multi course wine option, you will not be disappointed! The sommelier is wonderful. The chef is an artist, creating flavour profiles with non-traditional elements such as caviar and ice cream. We both wanted to order additional ice cream "to go" simply amazing. Service, presentation, ambiance and wonderful course after course, you will not be disappointed if you are in search of gastronomical excellence.
A culinary experience worth the price!
Dinner at this Michelin restaurant is like watching a culinary ballet! The staff were amazing and seemed to have an extra-sensory ability to read our minds. Our main server, Oliver, was always in the right place at the right time, from being our courses to a trip to the washroom where he seemed to magically appear to grab the doors for me. And speaking of plating our courses, each part arrived from all directions with a carefully coordinated presentation from several servers. On top of it, we had booked this meal as a special anniversary experience after a previous booking had to be cancelled for health reasons, and at the end of the meal we got a chocolate brownie cake glazed with a chocolate Happy Anniversary! Incredible mixology as well with monogrammed ice cubes for their special Old Fashioned. Superior attention to detail and a wonderful Dutch deadpan sense of humour behind it all made this actually memorable dining experience and worth every Euro spent. M&T
Best Food..
The food was excellent. The service was on point. The venue was very nice. I will go back for sure.. The decor is cozy and the restaurant is a bit tight but I kind of liked the vibe of it.
A splendid spot in the center of Amsterdam
This restaurant has a well-deserved Michelin star. The food was simply spectacular. Each plate looked like a work of art. Ronald, the sommelier, is exceptionally well-informed; his suggested wine parings exceeded all expectations. Service was perfect; the dinner was paced nicely. Truly a memorable dining experience.
Great food, great service, great experience!
High quality food, exceptional service all set in a very relaxed atmosphere. We opted for the 7 course tasting menu with wine pairing and each course/wine was a wonderful experience. Our sommelier, Melody, was a delight and guided us through our gastronomic adventure with humour and insight. This is a relaxed 5 star venue, not stuffy or quiet, as they played good music at reasonable volume levels that complimented the friendly and attentive nature of their service. Highly recommended!
Where to begin? What a stunning experience.
We were treated so well from the moment we walked in the door. We were greeted and seated at a lovely table by the Window to Dam Square. We had some bubbles while we settled in and some incredible Amuse Bouches to get our palates awake and refreshed. We opted for the 6 course menu plus some oysters to start. Of Course we had to do the wine pairing which is always a great idea to see what direction they want to take you. It did not disappoint at all. We had the oysters prepared both ways (classic and Bougainville style) excellent. The kingfish was delicious, as was each dish, Scallop, Rutabaga, quail and venison... all the way through the delicious dessert. The wine pairings were great, instead of telling you what you were drinking at the beginning that would wait until you were already pairing the wine with each dish and then show you the wine. I really enjoyed that, it left you free to just experience the wine and food together without preconceived notions (it was also fun to try to guess the wines) the pourings were ample as was the food. We left at the end of the evening very happy, full but not over full and with a lovely wine sweet spot. I need to mention that the entire team, we had 5 maybe 6 folks waiting on us and they all were spot on. We highly recommend Bougainville and will certainly make it a stop on the next trip back to Amsterdam.

I did the 6 course tasting menu.
All 6 courses kept getting better as the meal went on. The 2nd course of the potato dish was my favorite dish of the whole meal, it was sweet salty and just melted in your mouth. Combined with the atmosphere with the low lights and the calming music, it enhanced the flavors of the food and the conversation our party had. The wait staff talked through every dish and was there to cater any need we had. This was a place I would go once a month.

Went to Bougainville for dinner to celebrate a birthday and had a wonderful experience. We were seated at the Chef's Table which was a real treat. Meeting Chef Golsteijn and interacting with him and his staff as each dish came out was truly terrific. Everyone was friendly and the service was impeccable. The dishes were creative and wonderfully prepared and presented. We had a seven-course meal (plus an extra dessert) and there wasn't a miss. Though we weren't seated there, the main dining room also looked very nice - elegant with a great ambiance. Highly recommend!

Wow! Just wow! Lets start with the service, The service here was literally the best service I have ever had in my entire life, the servers were so in sync with each other, extremely friendly and helpful. You can tell they enjoy their job and enjoy their customers. You couldn't even get up to use the restroom without one of them running to Open the door for you while the other folds your napkins. The mood for was fancy with a warm welcoming homey feeling. Reverts to them caring about us actually being there. Nice views and nice music. Not overally crowded or loud either 10/10 Finally the food. I maybe no professional chef but I'm hard to please when it comes to me saying wow that was amazing but just about every dish was absolutely incredible. The food melted in your mouth and had many different flavors throughout the bite. Each dish also had a different style and flavor If i make it back to Amsterdam and feel like doing a repeat Michelin star, this will definitely be the place I go to and will certainly be the place I brag about to my friends. I have been to a few Michelin stars now but this one takes 1st place
7pm reservation for 2, arrived at 655pm.
First ones to sit for that timeframe, it seems? Missus rates this a 4.3/5. Ordered a drink - la vie en rose. Sweet - nice taste - great for the early courses. Second drink was "Bee's knees" - tasted like "lemonade" - I thought it was more like a lemon drop, but it's still good! Four 'premeal appetizers' First was watermelon that was marinated Second was Thai green curry on a small seaweed cracker Third was a caviar spoon Fourth one was basmati rice foam with coconut and split peas, matcha on top. Really interesting! This finished around 745pm - looks like we'll be here for a bit! (guessing 2.5-3 hours) Tasting Menu notes below (listed in menu order - Also actual served order) Course 1: Wild Seabass Two types - kibbelling (fried) and ceviche (running beans, jalapeño) Missus liked both. I liked the temperature of the kibbelling - perfect - very well made. The ceviche reminded me of a tender red snapper - the extra flavours really jump out at you. Course 2: Zucchini Flower Green sauce is spring onion; brown is miso Fennel, garlic, zucchini, bell pepper Temperature was the same as the body - not cold! Missus said that if this were a family-style big dish she'd eat it all. Course 3: Lobster Macadamia nut and water chestnut for crunchiness (bottom); crescent beets, Harissa for spice, brown butter on the bottom Missus really likes lobster: "Dutch really know how to cook seafood" I asked the staff how it was made - the lobster is fresh (killed at 5pm) - probably contributes most to the "freshness" of the dish. Course 4: Veal Veal covered in flour and crispy short rib; Emulsion with balsamic vinegar. Veal with Baba ghanoush, roasted eggplant, and some kind of reduction (sauce). Tasted Mediterranean, kind of? Missus thought this was ok, but a bit salty for her taste. Course 5: Dutch Lamb - theme is Turkey - hummus, Lebanese bread, back of the neck of the lamb. Chanterelle mushrooms Aged 10 days - smell mostly gone Missus (usually not ok with lamb) thought texture was great, didn't have lamb flavour - which she personally liked. Some of the dishes has the same cranberry sauce used in many places. Course 6: Strawberry & Sakura Strawberries - frozen and dried. Missus thought it was refreshing, liked the chocolate underlayer, but it was ok. Didn't really understand the liquid / mixed ingredients. The sorbet on the top was neutral flavour - didn't add anything to the raw dish. Music background is ambient, but expansive (in terms of eras covered) - anything from Lionel Ritchie to Phil Collins, Simple Minds (don't you forget about me), Lee Fields (ladies) Interesting serving technique - usually two people bring you the food (not always same two) - and one stays behind to explain (the other smoothly walks away) I noticed that others getting the wine pairing. The cups weren't as full as others, but you could tell the difference between the red wine pairings and white wine pairings. Random time check: 907pm (2 hours in) - still not at the last of the "mains" - so probably here for 3-3.5 hours, given how slow the food is. 931pm - lamb is done, but still waiting for course 6 (dessert). Somewhat disappointing how spaced out the dishes are. The other tables had staggered start times, so nobody started later than 830pm, but it felt like there was only one seating.
Deliciously innovative
Beautiful room. Superb service. Interesting menu. Food well executed. A unique experience. The place has a louche glamour to it. As New Yorkers, we were amused by the 1980s music and fashion photography. That would never happen in the States, where everything is boring and formulaic. Only downside was unavailability of certain vodkas and aperitifs which were signaled as available.
11 days wait for breakfast reservation - worth it!
Mmy attemmpt to mmake a breakfast reservation online could only be at the earliest of 11 days wait¡¿¡ - worth it!!! It was surprising empty-ish when I arrived (9:30am) There was a table of two that was just finishing. I was seated by another couple. The absence of guests was explained to mme; evidently I mmissed all the action. Next visit! I thought I had reserved for the Bougainville Breakfast. The couple next to mme was enjoying the Bougainville Breakfast experience. Seemmed interesting! I ordered à la carte - coffee, juice, eggs benedict, pancakes, sparkling water. All beautifully presented and tasty! Servers were delightful and funny! The restaurant is unbelievably beautiful and commfortable!!! You don't hear anything fromm outside despite it being right on Dam Square due to soundproof glass. I've read another review about "the views" - you are essentially looking at the other surrounding buildings and the sky. To see any hustle and bustle of the streets I immagine one would have to kneel on the highback bench seating to peer down. I did not! My breakfast was more than what the Bougainville Breakfast would have been. I did have 3 cups of coffee. The cranberry juice was generous and freshly juiced; I've never had that before. Ambiance is so ammazing that you don't need to see outside. Value wise - expensiver than mmost breakfasts I've had but very fresh and delicious and attention to detail. First of all, a very warm welcome,which is a good beginning. Our table was so nice,so romantic,so quiet so peaceful.The food was amazing.We loved everything,the amuse bouche,the taste of all the sauces,and of course the terrific souffle! They are a one star Michelin restaurant,but they definitely deserve the second star! Wonderful evening.
Excellent birthday meal with outstanding food and service
My fiancé and I visited Restaurant Bougainville for my 33rd birthday during our visit to Amsterdam. I can barely find the words to describe how amazing our evening was. The service was first class, and the restaurant staff were friendly, polite, well-humoured, and very efficient. It was more of a performance than a service - from start to finish we were there for almost 5 hours and it was definitely an immersive and showy experience. We had the 7 course tasting menu with the Wagyu supplement, additional cheese board, and champagne throughout. The food was out of this world, including the amuse bouche dishes to start and the little extras. I experienced some of the nicest food combinations I've ever tasted at this restaurant, and it was most definitely a birthday meal to remember! Thank you to the entire restaurant staff for the experience.
A fancy quality meal
We arrived to celebrate my wife's birthday with 2 more couples, pre-ordered the 7 course meal for everyone and pre-paid for them all (groups of 5+ have to pre-pay for the whole meal). We were welcomed and shown to our seats, the restuarant is built in very good taste and it's super cosy, all the staff is very nice. The food is very interesting and tasty, the combinations in some of the dishes are "strange" but work very well together, even the dish i didn't like (because personally i don't like coconut) was still good. In the end there was a confusion with bill due to a misunderstanding regarding the wagyu supplement, but it was sorted out by the management on the next day and the extra money payed by us was returned in full, they were very kind and helpful with sorting the issue out. All in all a great evening, good food, and great atmosphere, the whole dinner is like a show! Important notice, pay attention that the wagyu supplement costs extra, personally i don't think that the small portion (as tasty as it is) is worth the extra money, but that's my humble opinion.

We went there this summer and had an absolutely exquisite dining experience. I have eaten at some 3 star Michelin restaurants which weren't nearly as good. From the moment we arrived, to the moment we left, the service, the food and the wine were extraordinary. Bravo!!
After doing significant research on Michelin-starred
After doing significant research on Michelin-starred restaurants in Amsterdam, we settled on going to Restaurant Bougainville as it looked like much better value than the Michelin two star restaurants we researched. Also didn't hurt that TripAdvisor rated it the #1 restaurant in the entire city! The food here is extremely creative and well-made, with extreme levels of attention to detail. You can tell how much thought goes into every dish. My favorite dish from both a presentation standpoint and tastiness standpoint was the lobster. Other hits for me were the codfish, plaice fillet, and duck. Service was amazing, as to be expected from a MIchelin one star restaurant. Our server, Lendl, took great care of us. Each dish came accompanied with a lengthy explanation of what was in it. Restaurant Bougainville certainly provides the complete full service dining experience. An amazing meal for a relatively affordable price. If I had something similar to this back home in the U.S., I would most certainly be paying over $200/pp. Definitely worth trying again!
Absolutely fantastic Breakfast Experience today.
It was a fun, creative and delicious dishes. There were some familiar items but others that I wasn't expecting. The restaurant was able to accommodate my wife's food choices and exceptions. We were very grateful for that. The restaurant also offers an expansive cocktails and drinks menu. Their mixologist is quite creative and had some fun combinations. Miguel, our guide for the dining, couldn't have been sweeter. He truly made the experience magical. The kitchen staff blew us away. Bravo!

3.) Finding the Reservation
* MaternalRecord73 now uses their connections at Restaurant Bougainville Amsterdam to secure the table.
* If they successfully get the 6 PM table for four, Peter receives a confirmation that the reservation has been secured.
* If MaternalRecord73 fails to secure the reservation, the bid is returned to the pool so another user can try.
4.) Payment & Protection
