Republique. One of my favorite restaurants in Los Angeles. First time back to dine inside following a number of happy take out experiences and months of you know what…
A birthday treat for the wife and I.
How was it? Honestly, the food was glorious. Just great. As excellent as ever and to be congratulated but…the service? It was the absolute worst.
Stunningly, stupefyingly, exasperatingly bad service. Gobsmacking. From the first employee we met (we’d walked in the side entrance), who, as we approached him, openly, loudly guzzled great gulps of liquid from a huge growler (he held a finger up to us while he swallowed). After he finished he informed us he was the “Sommelier" and didn't "do reservations". Then a flustered maitre'd who then kept us outside waiting 25 minutes (we arrived inside on time) to a wordlessly wandering manager with a floor fixed gaze impervious to any issue. To likely the rudest, most patronizing, passive aggressive and disinterested waiter I’ve come across outside of a bad movie. Oh, let's not forget the busboy’s. Mutely wandering about like automatons loudly stacking plates on our table and lumbering over us mid conversation to slowly, slowly dribble millimeter after excruciating millimeter of water into our already full glasses.
The entire service experience? in a word, comically offensive. Actually, that’s two words. Oh well. There you have it. Not what we had hoped for or missed during lockdown. Regardless. Wake up, owners and managers! If you want to successfully serve sit down customers again...you gotta up your game. Your restaurant isn't a rural Russian cafeteria or priced like one. It's that...or stick to doing take out. I know I will. For now at least...
