We, Japanese people, do this at home a lot. In my childhood, I really loved it home as we can put fish or fresh ingredients rolled in the seaweed yourself. Having said that, this presentation at Ume was pretty graceful and beautiful, compared with home temaki-zushi. 12 kinds of fish arrangements on the plate as attached pictures. But there are only 5-6 seaweed pieces provided. And if you need more seaweeds, it will be extra $, which doesn't make any sense. Also seaweed quality is mediocre. Not top. We received a lengthy text message the day before - as if we were to take SAT at college board. We could not read it as it was too long but the grace time they can guarantee to keep the reservation is 5 min. We had had a huge pressure to arrive early like taking an exam or we would be screwed. But the door is not open before 5pm ( our reservation was 5pm) which also doesn't make sense. The door opened at 5pm sharp like an exam venue. The venue is unique but very simple and could be better from Japanese point of view. I actually expected better. Price is, I think, high for this whole experience (food, limited 90 min eating like an exam again, pretty plain Japanese -style (not quite real Japanese) setting - $78 per person and I ordered one more set of seaweed and ended up $100 per person including 20% tip. Definitely, it is a fun experience with beautiful presentations and fresh tasty food but not a place we must go back in 6 months or one year. My girlfriend (native japanese) said she was happy with the amount of food, but I (native japanese) felt it was like appetizer size plus and needed to go to grab a bowl of ramen after that.
