I brought my wife here for dinner as we had previously enjoyed Chef Mar's Beatrice Inn. Les Trois Chevaux was an even more enjoyable experience, as it trades the Beatrice Inn's raucous, hipster atmosphere for a serene, peaceful, and refined environment. The reviews that complain about the dress code (particularly the jacket requirement for men) are inexplicable, as the restaurant provides multiple notifications and reminders about the expected attire. Every other restaurant in New York with such requirements also provides jackets to improperly-dressed guests without dry cleaning between guest wearings. It would be odd to reward a guest's failure to be properly attired with not only a courtesy jacket, but also free dry cleaning services.The reviews that complain about the food (particularly the ones that loudly proclaim that the reviewer has eaten at plenty of Michelin-starred restaurants) are also inexplicable, as the food deftly blends traditional French haute cuisine methods with Asian influences. Many restaurants that try to do this end up with odd mash-ups on their menu, but Chef Mar succeeds with nearly every course of her ambitious 10-course chef's tasting menu. Standout dishes include the "Cannellonis" de Fruits de Mer, the "Chawanmushi" d'Huitres et Truffés Blanches, the Cervelle de Veau "Rossini", and the Crepes Suzette for dessert. These dishes feature approachable, yet multi-dimensional flavors, brought together inventively. Many traditional French dishes are too heavy, but Chef Mar infuses her cooking with a welcome measure of Asian-inflected lightness.Even the cocktails successfully blend Asian influences into traditional recipes, with surprisingly good results. The Cerasus (a blend of Kyoto Green Tea Gin, Sakura Vermouth, and Wakamomo in place of an olive) delicately softens the edges of a traditional martini. I'm usually dubious of overly-clever variations of the martini, but this one was well-conceived, balanced, and enjoyable. Likewise, the wine pairing program was thoughtfully crafted, with mostly French producers showcasing a wide variety of pleasing, distinct, and well-structured wines--all very generously poured. So generous, in fact, that I'd recommend an aperitif with lower alcohol content than a martini.As with the food and drinks, the service struck a fine balance: polished and professional, yet not pretentious. Everyone from the servers to the sommelier are knowledgeable and describe the offerings well--but instead of just reciting lengthy descriptions, the entire staff takes genuine pleasure in explaining what they're serving. We were not "relentlessly upsold"--and nearly all upscale French restaurants offer very expensive additions such as truffles and caviar, so it's hard to understand the negative Yelp reviews on that point.Before our dinner, my wife was curious whether the negative Yelp reviews held any truth--or whether the much better reviews for Les Trois Chevaux elsewhere on the internet were more on-point. With each successful course, we were glad we didn't listen to the undeserved trolling--and we still can't understand what's truly motivating it, as it's a disservice to the Yelp community that relies on these reviews. Don't let the negative voices dissuade you from Les Trois Chevaux. Yes, it's very expensive--and, yes, you need to actually wear a jacket--but it succeeds in delivering a creative, special, and truly pleasurable experience.
