Alright so NAOE to me was always a once in a lifetime experience because that is one heck of a hefty bill. We used our anniversary as an opportunity to try it. You walk into this door that simply has a business card and are transported into a private kitchen with Chef Cory and his associates. The staff was super sweet and attentive. The meal was like a marathon. Each course made sense one after the other. I am a VERY adventurous person but some of these items, I couldn't even get behind. The bento box contained geoduck which was perfectly cooked and crab claw in rice vinegar which was the absolute highlight of the meal. The sushi courses were excellent except for the ice fish. It is a bunch of tiny translucent fish but to my surprise, it was slightly bitter. The steam fish course came with a type of whelk which I could not stand. Its flavor was so bitter and charcoal esque that it overpowered the flavor of the rest of the course. There was a Japanese delicacy of sun dried eggs that was a bit too chalky for my taste. The rest: eel, barley, lobster, uni, the list goes on, were absolutely beautiful and phenomenal. Would I eat here again? Probably not because paying ~$700 for two people is insane. Was it worth the once in a life time experience: Absolutely. And for anyone who is adventurous and willing to try a Japanese delicacy, this place is fantastic.
