I finally tried Sushi Rexley in downtown St. Petersburg last night, had their signature omakase. It’s a small venue, only 10 or 12 seats at the sushi bar, they only do omakase. The restaurant is fairly casual with a young and very knowledgeable and interactive staff, but don’t let that fool you. The food and the overall experience were superlative. They had a wonderful variety of unusual, seasonal and exotic fish, sourced from around the world and of impeccable quality. Preparation was mostly traditional with some interesting twists that worked well (a whiskey-shoyu brushing for some fish, for example). They showed tremendous attention to detail and clearly strived for perfection in everything. Last night’s omakase included: simmered firefly squid; branzino, madai, hirame belly and marinated halibut sashimi; cubed albacore with caper oil; akami, ora king salmon and o-toro nigirizushi; ora king salmon cured with koji (wow!), hiramasa belly and shima-aji nigirizushi; buri carpaccio; uni with house-made tofu and yamaimo; shirako; fried cod roe; salmon roe and skin temaki; abalone with abalone liver rice; seared A5 Wagyu beef with uni cream; scallop and anago nigirizush; tamago. This was such a pleasant surprise, I’ve finally found a serious place for sushi here in Pinellas Co.
